In a large pot, bring elderberries, water, cinnamon, cloves, and giner to a boil.
Reduce heat, cver, and simmer until liquid has reduced by half, about 40-45 minutes.
Allow liquid to cool, then drain the liquid using a fin mesh strainer or cheese cloth
Press or squeeze all the liquid out of the berries.
Add the raw honey and mix well.
Store in an airtight glass container in the fridge for up to two months.
